Sodium stearoyl lactylate has the functions like: increasing dough strengthening, emulsifying, preventing aging, retaining freshness, etc. It is widely used in bread, steamed bread, noodles, dumplings, etc. it is also used as emulsifier in margarine, cream , cosmetics, etc. 1 Increase dough strengthening, elasticity, enlarge the physical volume of the brad and steamed bread, improve the texture; 2 Make the surface of bread and noodles smooth, decrease the rupture rate; 3 Make biscuits demolded easily; 4 Interaction between SSL and amylose to prevent aging and retain fresh; 5 Improve frozen food quality.
