• Main Physicochemical Properties of Sucralose

  Sucralose, chemically named 4,1',6'-trichloro-4,1',6'-trideoxygalactosucrose, is a white powdery product that is highly soluble in water, ethanol, and methan ol. It is 600 times sweeter than sucrose, with a pure sweet taste, and also features high safety and good stability. Sucralose belongs to non-nutritive powerful sweeteners, which are hardly absorbed by the human body. It conforms to the current development trend of sweeteners and is a high-intensity sweetener already recognized by many countries worldwide, including China.
• Sucralose is highly soluble in water, with a water solubility of over 25% at room temperature.
• It does not easily produce foaming when dissolved in water, making it easy to dilute.
• It also has good solubility in alcohol, suitable for addition in alcoholic beverage production.
• Its greatest advantage is that it has a mellow taste similar to sugar and a rich sweetness, while maintaining stability across a wide pH range from acidic to neutral (as shown in Figures 3 and 4). As a sweetener added in food processing, it not only imparts a good sweet taste to foods but also does not cause related changes in the food, making it an unprecedentedly ideal sweetener.

• Applications of Sucralose in Food Processing

  Sucralose is a low-calorie, indigestible carbohydrate suitable for addition in low-calorie food production. In addition, it is non-corrosive to teeth, so consuming it does not cause dental caries, making it a sweetener for food production that meets consumers' health requirements. With its mellow and rich taste, good stability, and low calories, sucralose is beneficial to consumers' health. As a sweetener, it can be used in combination with traditional sweeteners or alone. Even foods produced with sucralose alone have an ideal sweet taste.
